Homemade Coconut Milk
When my son was about 1 year old, I set out to look for other drinks to add to his diet just in case I had to wean early for health reasons. (He ended up weaning himself surprisingly!) At the time, I didn’t have access to good dairy and I knew that a majority of store bought non-dairy milks were just water, a handful of nuts or coconut, and a ton of synthetic “nutrients”.
So I ended up at homemade coconut milk after I found this recipe from Wellness Mama. I made it the way that she recommends the first time but I realized that there was WAY too much fat solidifying. I would have to reheat the liquid every day just to melt the creamy part. So I changed the recipe just a little bit.
I use 1 cup of shredded organic coconut, unsweetened with 2 quarts of water, instead of 1.5 cups of coconut per 4 cups of water. This still makes a nice, creamy milk! All 3 of us use the coconut milk too so we go through it rather quickly
- Add 1 cup of coconut to your blender
- Heat up one quart of filtered water on the stove until it is just hot to the touch (you don’t want boiling water because that will not end well when you blend it- if you make the water too hot, let it sit for a few minutes)
- Add the water to the blender and blend for about 2 minutes.
- Strain, add coconut back to the blender
- Heat up 2nd quart of water until it is just hot, blend with coconut for 2 minutes
- Strain coconut- if you compost, I am sure you can use the remains for that purpose, if not then discard them
- I like to mix up my 2 quarts because the first batch is usually a lot creamier than the second
- Store in the fridge- usually lasts about 4-5 days
- You can drink it plain or flavor it- a splash of maple syrup and a 1/2 tsp of vanilla extract per quart makes it delicious!
This whole process takes maybe 10 minutes, that is it. You also get the benefit of drinking fresh, real coconut milk without added preservatives or synthetic nutrients!
Coconut is high in lauric acid which is amazing for our health. The only thing higher in lauric acid is breast milk. So for those of us that were never breastfed, using coconut products as well as products like monolaurin can really help rebuild our immune system.
